Hey Bloggers..a check in
Hey guys it's Tim,
Sorry for the lack of postings lately but I've been busy helping the rest of the team prepare for CHUCK'S FEST!
We are just 8 days away from the party of the summer and I wanted to fill you in on the latest happenings at Chuck's.
First, we are going to have a post Chuck's party that following Monday so September 10th through the rest of the week called the Empty the Kegs Party! We're going to have a lot of beer at Chuck's Fest and if there is any leftover we are bringing the rest back with us to share with all of you! Prices to be determined of course.
Second, the food menu and drink menu has been fully updated at www.chucksfest.com....tickets are also available here at the restaurant for Chuck's Fest along with visiting the website above. There is NO PARKING FEE and tickets are ONLY $5.
Third, we have around 28 Blackhawks tickets left...so make sure you call the restaurant to purchase your tickets over the phone or come visit us here to pick yours up now. It's going to be a great time.

Tim's Food Review: Grilled Chicken Sub

I'm sure you've all heard or maybe have had this next Food Dish I'm about to review--The Grilled Chicken Sub!
I've only heard rumors of this dish and I finally got my hands on one last night and bloggers, it didn't disappoint, in fact it was one of the best dishes I've ever had at Chuck's and I've had a lot of meals here!
It's chunks of grilled marinated chicken on French bread topped with melted cheese, mayo, lettuce and Chuck's sub salsa. Every single bite of this sandwich was mouth watering. The chicken blended with the cheese and mayo blended so well together and it was one of the best tasting sandwiches like I said I've ever had. The Chuck's salsa also provides a nice refreshing flavor to the sandwich and the French bread was perfect. Of course my two sides of coleslaw and mac n cheese complimented the sandwich wonderfully also.
This special happens once a month and you must make this a priority to try in the future. It is a wonderful sandwich that only gets better with each bite.

Bears Preseason Game tonight: Voodoo Lounge Special!
Hey Chuck heads,
Tonight kicks off the 2012 Bears Season (Preseason) but what better way to watch the Bears game, then by coming to the Voodoo Lounge and getting 20% off your entire food/drink bill during the Bears game while sitting in the bar.
It's a great deal so grab some friends and head up to the Voodoo Lounge tonight. Kick off is set for 7:30pm and let's all watch the Bears take on the new look Peyton Manning led Broncos!

Chucks Blackhawks Outing
Hello bloggers,
So I have some awesome news that is sure to get your attention. While I don't have all the details yet, Chuck's is going to be hosting it's first ever group outing with the CHICAGO BLACKHAWKS!!! Now we did do one a few months back with the White Sox and it was a huge success, minus the 100 degree day so it's time to change sports and move from U.S. Cellular Field to the United Center.
Here's what I've gathered so far- the date of the game is October 20th and it's against the Hawks greatest rival, the Detroit Red Wings. We have secured a little over 80 tickets but are still finalizing the cost of the event which will include food and transportation, just like the White Sox outing. As soon as any more information comes my way, don't you fear bloggers, I will have it here for you. We will obviously post via Facebook and this blog when tickets will be available to you the public, so keep it glued to the blog and Facebook for that announcement.

Hello my fellow bloggers
In case you guys haven't noticed..there have been a lot more posts over the past two weeks and well that's for good reason. I am now a full time employee here at Chuck's and I'll be posting the latest and most breaking news that comes across my desk. There is a lot of happenings going on right now and for a full recap obviously check the posts from the past few days and I have some more exciting news in the days to come.

Bear down in the Voodoo Lounge this preseason
Bears fans listen up,
Every Bears Preseason Game the Voodoo Lounge will be offering up a killer special. Now I know every bar claims to have great deals/packages but let's be honest...you can end up spending 25-30 a person. The Voodoo Lounge is offering 20% off food and drinks in the Lounge during the game. To prove how good of a deal this is let's take a look at an example:
Say two people come in and buy 4 beers priced at $5, $4, $8 and $3. Let's say you then order some food. The Super Sampler for $16.25 (a lot of food) and a Pulled Pork Deluxe with choice of 2 sides for $8.25.
Now your total is going to be before tax of $44.50. Let's take off the 20% which is subtracting $8.90 bringing our new subtotal to $35.60. Add tax and our total arrives at $38.80 or $19.40 per person. Now that's a deal folks...coming in under $20 for a lot of food and granted only two drinks but granted this is just an example.
So instead of sitting at home watching the Bears kick off their 2012 Preseason, come to the Voodoo Lounge for some great food, your choice of 120 beers and over 12 HD television's to watch DAAA BEARS!!

Bloggers you gotta come to Chuck's to try this dish it is ridiculous! Chuck has unveiled his 'Big Dog' and of course has made a hot dog even more tasty. He has taken a hot dog and stuffed it with American Cheese, then he wraps it in bacon (I'll give you a second to catch your breath,) and then adds grilled onions, sauerkraut and tops it all off with a Creole mustard. All of this mouth watering hot dog is $4.95 for just the dog and $7.45 for deluxe (2 sides).

The news just keeps on rolling in. For those of you who haven't seen it on Facebook, Chuck's is going to be promoting Chuck's Fest on one of Chicagoland's up and coming radio stations Q87.7
Q87.7 Underground Alternative is quickly becoming one of the most talked about radio stations in Chicago and what better way to spread the word about the fest of the summer then by joining forces with a power house radio station.
The week leading up to the fest (so first week of September) you will be hearing a lot of promotions for the fest happening September 7th-9th at Toyota Park.
So if you haven't had the chance to give this new station a listen I would check it out now and keep your ears open come early September to hear all about Chuck's Fest 2012!

Chucks is proud to announce Medical Personnel Discount Day
Beginning next Wednesday, August 1st (not today), Chuck's will be starting Medical Personnel Discount Day. In the Voodoo Lounge only, while dining in, show us your ID that says you work for a hospital, doctor's office or other medical facility and get 20% off your entire bill of food & drink all day. The Lounge opens at 10:30am and closes at 2am on Wednesdays. We are getting posters/flyers printed this week and if you're interested in getting some to hang in your office, lunchroom or cafeteria, let us know and we will make a packet for you. Spread the word by sharing this on your page (Facebook) with any known medical personnel! THIS WILL ONLY BE ON WEDNESDAYS starting next week, August 1st!

Chuck is going to be throwing out the first pitch this Friday at the Windy City Thunderbolts game vs the Traverse City Beach Bums (interesting name right?)
After he delivers a fastball for a strike, Chuck is going to be working the booth so make sure you stop by for your chance to win one of our Chuck's baskets and the chance to win Chuck's Fest 2012 Tickets!
The game is scheduled to begin at 7:05pm so make sure you get there before that to see our own Chuck deliver the first pitch!

So as NFL training camps get under way it's time to discuss what matters to most men, and yes some women...FOOTBALL!
Chuck's is tossing around the idea of hosting those who participate in live fantasy football drafts. We want to know what is a reasonable per person package price that would include food/drink. We have posted something online via Chuck's official Facebook page but I wanted to reach out to you guys here via the world wide web. We've had responses from $20-$30 a person, so please let me know what you guys feel would be a reasonable price and I'll be sure to share it with the rest of the management team.

Chuck's Fest Artist Spotlight: CANDLEBOX
Hey guys it's Tim:
In case you haven't heard, Candlebox is playing at this year's Chuck's Fest and will be headlining on Saturday September 8th from 9:30-11:00pm. If you're not familiar with Candlebox they have been around since 1990.
They made it big in 1993 when they released their debut album that featured the hits- 'Change,' 'You,' 'Far Behind,' and 'Cover Me.' Their album quickly shot up the charts and even earned them a headlining spot at Woodstock '94.
I don't know about any of you but I've always been a fan of these guys and am very eager to see them headline Chuck's Fest 2012 on Saturday September 8th. Here is one of their songs I'm sure we'll be hearing that night, so get ready to enjoy some great live music accompanied by some great food and of course a nice cold beer (if of legal age of course)!

Some Chuck's Fest 2012 tidbits...
Hey bloggers,
So there's been some stuff going on about Chuck's Fest 2012 and I wanted to make sure that all of you guys who follow the blog were brought up to speed. We here at Chuck's want to know the following:
Are you creative or an artist that has beer, food, blues, music,BBQ, Mexican or Cajun related pieces and would like to showcase it at our Chucks Fest, please email at Tracy_chucks@yahoo.com for more info.
So obviously if you or someone you know fits the above mentioned description please contact the above email with any further questions you may have, it's a great opportunity and a great way to get your name out there.
Also there is news on how to obtain tickets: We now have them here at the restaurant. Daily admission is $5, the Beer Tasting Session is $45 (includes your admission) and Parking is FREE! You can also buy tickets online at www.chucksfest.com. The $3 service charge online will be reimbursed to you at the gate with food/drink tickets.
Also, there is a rumor going around that Chuck wants to do some more deep frying experiements for this year's fest and he wants to start by doing deep fried oreos, yes you read correctly. Check out this picture below and you'll want to have one just as bad as I do now while typing this sentence out.

The contents of this beverage include: fresh muddled strawberries, Ketel One Citron, Triple Sec & lemonade.

Mystery meat at this year's Chuck's Fest?
Hey guys,
So if you haven't heard the news the crew at Chuck's is bringing something along to this year's fest that is well a little different you can say....GOAT!
Yes you have read correctly, Chuck and staff are bringing with them some Goat which I for one will definitely be wanting to try as I've never had it before but am more then willing to give it a shot!

Chuck's Fest 2012 Update
Hey everyone it's Tim...
In case you haven't noticed the blog has added a countdown time for the event of events, of course I'm talking about Chuck's Fest 2012!!! Happening September 7th-9th at Toyota Park this is sure to be the party of the year!!!
We've got an AWESOME line up for Chucks Fest this year. Friday - Maggie Speaks and KaiserKeller. Saturday - Candlebox, Local H, Green Sugar and 90:99. For Sunday we have Ronnie Baker Brooks, Linsey Alexander, Marty Sammon and Smiley Tillmon Band!
Not too mention the infamous beer tent that will boast over 120, yes you read correctly, 120 beers so come thirsty, but as always please drink responsibly.
Needless to say this event is going to have something for everyone and I can't wait to see you guys there...
So please tell your friends about Chuck's Fest, I know we have like 70 something days left but hey it's never too early to start thinking beer and BBQ!

My second food review: Chicken Pot Pie
Hello boys and girls, it's Tim.
So I found myself at Chuck's last night as I do every Tuesday for Trivia and decided it's been a few weeks since I did my first food review (The Cuban Sandwich) so decided it was time for another one. Now while I can review the BBQ dishes whenever I'd like (one of those will probably be my next dish to review) I like to always look at the specials because as we all know Chuck can thrown down with his specials and last night was no different.
I decided to try his Chicken Pot Pie and my friends I didn't think there was a way to make Chicken Pot Pie better but somehow Chuck found a way and I'm saying this with the up most sincerity. First let me start by saying I expected the portion to be a traditional let's call it smaller serving but of course this is Chuck's and nothing comes in small portions and it was HUGE! Now earlier in the evening a friend and I took advantage of the .50 cent wings so taking this mammoth pot pie down was going to be a challenge.
This pot pie had it all. It contained some of the most tender chicken pieces I've ever had and that was topped off with carrots and peas and other vegetables that really all mixed perfectly together and truly melted in your mouth. To top off this dish there was also, what's the best way to describe it, a puffy pastry crust that accompanied the chicken and vegetables that was sensational as well. It had a great flaky texture to it that when combined with everything else in the bowl it just made for one scrumptious dish.
Now I know I promised to try one of the new Elvis Cupcake's that Chuck is offering but my friends, I just couldn't possibly eat another bite after taking this plate down and that's nothing to be ashamed of right?
So if you're looking for a new twist on one of America's most timeless classic dishes, I give the Chuck's Chicken Pot Pie a huge two thumbs up and is something you must try for yourself because you won't be disappointed and you won't be left hungry.

Food review postponed
Hey guys,
So I ended up at The Voodoo Lounge tonight for some trivia (didn't win sadly) and I was meaning to write a review on one of the specials the grilled chicken sub but sadly it was all gone because of such a high demand for the sandwich so a new food review is going to have to wait until next Tuesday when I'm there again for some good ol' trivia.

Food Review #2 coming tomorrow
Hey guys it's Tim:
Just wanted to give you an update about what's coming on the blog. Tomorrow night I'll be at Trivia Night at the Voodoo Lounge and conducting my second food review. Now since I'm on a diet I'm choosing between the Super Caesar Salad and one of the June specials the Grilled Chicken Sub..so needless to say it'll be a game time decision.
So check back tomorrow for my second food review and make sure to vote on the new poll question cause after this food review my next one is totally up to you, my fate is in your hands!

Chuck heads invade U.S. Celluar Field
Hey everybody, it's Tim. Has everyone cooled off from that game yesterday? I know I have but in all seriousness it was quite a game to be at. In a game that saw 18 combined runs and 27 combined hits I say it was a perfect game to be in attendance at no matter how hot.
Thanks must go out to Chuck and the entire restaurant staff for hosting this event and I spoke to many in attendance yesterday and they were all very thankful but most of all, had a great time despite the near upper 90 degree temperatures. (Thank god for those rain showers in the outfield)
The event ran rather smoothly as in the morning hours everyone gathered inside the Voodoo Lounge for some pre-game drinks including beers and my personal favorite hurricanes and then settled onto the three buses outside that took us to the ball park. From there we were treated to some of the most delicious items Chucks has to offer which of course everyone loved.
The event was a success and the food as always was outstanding as you can see in the picture below as Chuck himself was on location providing some excellent pre-game tailgating food including his ribs, pulled pork sandwiches, corn on the cob, mac n cheese and some chicken.
All in all I don't know about everyone else but I had a great time with the group I went with and they all shared the same thought. It was a lot of fun that included some great company, delicious food and a White Sox 12-6 winner.
Thanks again to Chuck and everyone for putting on this event, the first of what this fan hopes is many to come!

Tim's First Food Review: The Cuban Sandwich
Hello my loyal blog readers,
When I first started doing this I had made the promise to review food dishes and that time has come. Now I took to Facebook the other day and I must give credit to where credit is due. Thanks to Scott Wrobleski for the suggestion of reviewing the Korean BBQ Wings (Scott I had them and they were delicious, the flavor and smell of those wings hits you right from the start and they are delicious, highly recommend) but that isn't the dish I'm reviewing here today. Instead, I'm going with another fan suggestion and a shout out must be given to Lewis Shapiro who recommended me trying one of the specials so that is the route I went with yesterday. The first dish I'm going to review here on the blog is The Cuban Sandwich. Keep in mind I'm not a professional food critic by any means, I just portray one on the blog.
Now if you're like me, my times at Chuck's usually consist of me going with a BBQ dish or a Cajun dish but last night I was in the mood for something different and I wanted my taste buds to try something I've never had before. The Cuban Sandwich which is described on the menu as: grilled French bread with fresh shredded pork, ham, Swiss cheese, garlic-mustard mojo sauce, and pickles. Let me tell you something friends, it was delicious. The way all the ingredients come together hits you from the first bite and the French bread has a nice crisp taste that contains a lot of flavor with each and every bite. I'm not a big fan of mustard traditionally but this mustard has a zing to it which gives the meat extra flavor and blends in beautifully.
Speaking of meat, the shredded pork and ham just melt in your mouth and when it's covered with the garlic-mustard mojo sauce, look out friends it's to die for. Everything on this sandwich compliments one another famously. The only thing I forgot to do was add a little drop of mild BBQ sauce just to experiment, like I said before I love my BBQ sauce. The pickles stood out for me on this sandwich because well, I just love pickles and they always make a sandwich good. For sides as you can see above I had to go with the best mac n cheese on the planet and some delicious french fries dipped in what else...BBQ sauce.
I can't wait to go back and have this sandwich again when it's on special next time because it really truly did knock my socks off. It was something I've never really had before and I loved the flavors of the meat, the French bread's texture and really enjoyed that garlic-mustard mojo to top it all off. I would highly recommend trying this special sandwich next time it's available because I really think you'll enjoy it!

I need to ask you one question before I get going...are you sitting down? Reason I ask is because this news I'm about to share with you might send a jolt of excitement running through you and I just want to take precautions so you don't hurt yourself while reading this. The good folks over at Chuck's Southern Comforts Cafe have announced a BBQ Eating Contest!
Yes I know this isn't a typo it's a legit sweet BBQ Eating Contest and it's about to get underway next week. Here is the 411 for all of you competitive food eaters out there:
Chuck's BBQ Eating Contest Rules:
Qualifying Rounds
**Now there are other rules that are in effect, I listed the basics above so if you are interested in learning more stop by Chuck's and ask to pick up a registration packet (it's blue) for the BBQ Eating Contest to learn more about this glorious event which leads all the way up to the last Sunday of Chuck's Fest where a BBQ Eating King or Queen will be crowned.
So all that's left for me to ask you now is this...are you up to the challenge? You've seen those guys eat a zillion hot dogs on the 4th of July but now it's time for all of you out there who've been told you'll never make it in competitive eating to step up to the plate and down the sandwich known as the pulled pork.

The Admiral comes to Chuck's
Hey everybody,
So it’s not everyday that someone famous or even of great importance walks into your restaurant right? Wrong! Chuck’s, which has seen a celebrity or two in it’s time welcomed Admiral James Stavridis of the United States Navy Monday evening. Now give that a moment to sink in I did say Admiral of the U.S. Navy. The Admiral who was there with a full security detail was in town for the NATO summit and decided to enjoy some delicious BBQ before he had to set out again.
Now besides how cool this is, it’s not something every restaurant can lay claim to. It’s a pretty high honor for a ranking official to want to come to your restaurant and it’s something that Chuck and the entire team at Chuck’s is truly proud of and recognizes. The Admiral who serves as the current commander is also the U.S. European Command and NATO's Supreme Allied Commander Europe. He is the first Navy officer to hold these positions.

Chuck's Outdoor Patio is back
Hey bloggers,
So a lot has been going on at Chuck's lately and I wanted to update you on something that everyone should take advantage of at the restaurant and that's the newly designed outdoor seating area. Freshly planted flowers thanks to Marla Pine, along with hanging pots draped on the edges of the building make for a perfect date night or just to go out with a group of friends for a nice time out on a nice night.
So the next time you're at Chuck's Southern Comforts Cafe and you think to yourself, 'Hey it's so nice out let's sit outside to eat!' well then the patio is the spot for you to enjoy some delicious food, drinks and of course the company of your nearest and dearest friends and family.

A one on one chat with Chuck...
Hello ladies and gentlemen,
Well if you think back to just a short two weeks ago you may recall my first poll question at the blog and that question was, ‘What do you guys want me to write about first?’ Well you guys came out in huge numbers and clearly wanted to know all about the man behind the name of the restaurant Chuck. I had the privilege to sit down with him and ask him questions I’ve always been curious about and used the questions from you guys who visit the blog. So without further a due, here’s a little background about the man whose cooking and personality have taken him straight to the top.
Would you believe that Chuck liked to cook from an early age? If you guessed yes to that question then you would be correct. Chuck has been cooking ever since he was little and it all got started for him thanks to his mom. “My mom was always a really big cook and she always cooked really cool stuff and I cooked with her a lot,” said Chuck. “We would watch Julia Childs, yes I watched Julia Childs and my mom would cook a lot of French dishes she would see on the show,” said Chuck. Things like the delicious Chuck’s Grandma’s Cookies, which are sold by the front counter (editor note- I’m eating one as I’m typing and it’s delicious) are some of the customer’s favorites desserts served at the restaurant.
“It is because of my mom and cooking with her that really motivated me to go into cooking,” said Chuck. Things however didn’t always appear to be headed in the culinary direction for Chuck because at a younger age he became side tracked thanks to his brother. “I wanted to go into chef’s school while I was in high school and then I just got distracted with my brother as him and I got into the video business and decided to open up a video rental store so that kind of halted my plans to pursue cooking,” adds Chuck, “so then it wouldn’t be till I was around 30 that I decided to go to chef school.”
Chuck would meet up with a pretty famous chef along his journey, Rick Bayless and the two would form a lasting friendship, one that continues to this day. “He (Bayless) helped me in so many ways. He would have extra ribs that he would want to throw away at night and instead he would let me take them home at night to work with them,” says Chuck. Like any great chef knows, practice makes perfect and it could take up to months if not years for any chef to truly master what it is they are trying to do. “I would take these ribs back to Rick and his wife and they would critique them for me. Either they need more salt, seasoning or rub,” adds Chuck, “so basically I worked on all my rubs and Bayless would be my professional taste tester.”
Having the right mentor can go a long way no matter who you are and Chuck is truly appreciative of the one he had in Bayless. “He was a perfectionist and he would always tell me to make sure to get the flavors dead on,” said Chuck. “It took me probably six months to perfect a dish and Rick would come through the line and taste every dish and would say it needs this or needs that.” But after a while it was time for Chuck to set out on his own and when asked if his mentor gave him any words of wisdom to take with him Chuck had this to say, “His main advice was nailing down my seasonings, we worked on it for almost a year until we perfected it.”
Now we fast forward several years and we have arrived at Chuck’s Southern Comforts Cafe. You know the dishes, you love the smell of BBQ and if you’re like me you want to patent an air freshener and hang it in your car...wait that’s just me probably! But I’ve always wondered how Chuck arrived to open a restaurant that serves BBQ dishes and both Mexican and Cajun theme dishes?
“It’s my favorite food,” said Chuck easily answering my question. “I love all of these styles of foods and all have a meaning to me. I love cajun food a lot. My first cookbook was Paul Prudhomme’s Louisiana Kitchen and that’s where I learned to cook cajun food,” said Chuck. Would you believe that Chuck’s first chef job would set him on the path to taking on the world of Mexican dishes? “My first chef job was at Frontera Grill and through that job I learned how to cook all sorts of Mexican dishes,” said Chuck.
Now if you’re like me BBQ is your ultimate indulgence. I don’t know about you guys reading this but I love me some BBQ. I’ve been eating it all my life and apparently so has Chuck. “I just love it. As a kid I worked with my dad at the laundry business and we would always eat all sorts of BBQ. We would go to Leon’s and I just grew up eating that stuff. I would visit Leon’s at least once a week because it was good Chicago style BBQ,” exclaimed Chuck.
Now comes the point in the story where we turn to gardening. No that wasn’t a typo, I did say gardening. Who knew that this master chef was also a gardener at heart as well. Recently if you haven’t heard, Chuck purchased a home in Hickory Hills that they are going to use to turn into a massive outdoor garden.
“Well we got this house that came with 2 big pear trees which I hear are just awesome and it also came with a apple tree,” said Chuck. That’s hardly scratching the surface when it comes to what Chuck has in store for this place. “As of now we’re going to plant about 150 asparagus plants and about 25 rhubarb plants, both which will be ready every spring. I’m also doing 150 tomato plants with around 5 to 6 different varieties and I plan on doing around 70 to 80 cucumber plants, yellow squash and zucchini, and pepper plants as well.”
Now my friends that is a lot of stuff going into the ground but it’s not all there yet, in fact it’s growing in Chuck’s basement as we speak. “I have a bunch of grow lights and in fact I have a 100,000 watt bulb that covers about an 8 x 8 area that I’m using right now. If all goes well we’re looking to have everything moved from the basement and over into the new garden sometime this month,” said Chuck. Again not too shabby right?
But with all this hard work it has to get an individual thinking retirement one day right? Well not so fast says Chuck. “No I don’t think so. I’ll probably be doing this till I’m very old and I don’t see any reason to stop,” adds Chuck, “the restaurant business is nice because you can teach people how to do it and take a step back that way I can come out from behind the kitchen and go hang out with customers. Maybe I’ll be the old guy at the bar with a beer one day!”
Well now that retirement is no longer in the picture I, like many of you, wanted to know what personal goals Chuck has for the restaurant in the foreseeable future and let me tell you guys, you’re going to like this. “As of now we’re working on a second place in Darien and it’s going to be called Chuck’s Smokehouse and Grill, well that’s the working title,” added Chuck with a grin. “It’s going to be the same food we’re doing here currently and maybe take it up a notch or two. I mean bringing in fresh sea food and steaks and featuring more grilled items like pork chops and lamb chops,” said Chuck.
Now let me pause for a minute so both you and I can wipe the drool away from our mouths...let’s continue because there is more. “I would really like more wood burning grill type stuff and as for the mexican dishes I’m thinking a little more gourmet. Filet mignon’s or even mexican style pork chops,” said Chuck. That’s not all that’s in store either as I found out. “I’d really like to open some little sandwich shops in the city like in Lincoln Park. The menu would be more limited but still feature BBQ and sandwiches,” explained Chuck.
Now that stuff is down the line but I wanted something more now and immediate because I didn’t want to disappoint the reading public at home so I asked Chuck about any little secrets he could share with me about the party of the year- Chuck’s Fest 2012! “Well talking on the music side we have some pretty great bands lined up for this year. Friday we have Maggie Speaks which is a classic rock band. Saturday we have more of an alternative rock theme with Local H and Candlebox and that’s the day we’re doing the beer tasting with over 100 beers on tap,” said Chuck. Yes I know what you’re thinking 100 beers!
“Sunday is going to be our blues day and I can’t wait to see Ronnie Baker Brooks. He is one of my favorite musicians because he’s like a Stevie Ray Vaughan type player who just jams and combines rock and blues, he’s a show you won’t want to miss,” exclaimed Chuck. As for the food Chuck is bringing along with him this year? Well let’s just say Chuck is looking to do something big. “I’m looking to try and pull off a run down to New Orleans for a big fresh shrimp gathering to use in a shrimp boil. I’d like to bring back some shrimp right from the Gulf but only if the shrimp are right,” said Chuck. In addition, this year’s fest also might feature some cooking demos as well but as more details are announced I’ll have them here for you at the blog.
I just had to ask Chuck what was it like to be on television (and not to brag but I was sitting in the corner booth during the filming of Diners, Drive-Ins and Dives). “Yeah it’s been pretty cool and fun being on TV. It’s a cool career to become famous I tell the kids during career days,” adds Chuck, “your local paper if you have a good restaurant is going to talk about you. I have to consider this restaurant the most famous one on the southside. We’ve been on every TV show I can think off.” And whose to blame them? Last year they were on Windy City Live, 190 North, Chicago’s Best and Diner’s Drive In-s and Dives.
Chuck knows that if it wasn’t for all his loyal customers he wouldn’t be able to do the thing he loves most, cook. “Thank you guys for always coming in and thanks for your support. I appreciate the loyalty of my Chuck’s fans and I try to keep myself accessible so that way if they ever have any questions or comments I’m available,” said Chuck. Chuck and the entire staff always pride themselves on delivering outstanding food and service and please if you guys ever have comments let them know right away that way they can make sure to fix it for you then and there.
Lastly, I’d like to take a brief second to thank Chuck for taking the time out of his busy schedule to sit with me to do this. Again so much appreciation for making this blog a big success. The site is averaging a substantial amount of hits per day and I can't thank you guys enough. I wish I could post something every day but I do work another job as well!
Anyways, a lot of things are happening in the next several days here at the blog so I wanted to give you a guys a sneak peak at what's to come:
Saturday- Going to visit the Garden and will be taking videos and pics and posting them here at the blog giving you a guys an exclusive look at what Chef Chuck will be growing in the Garden.

Interview with Chuck coming next week...

So I'm here to tell you that next week I am going to sit down with the man himself Chuck for a one on one interview and dive into the world that is Chuck. Now I have prepared some questions of my own but for this feature I want to know what you guys at home think.

Chucks and the White Sox Tailgate Outing!!!

If you haven't heard the news already well then where the heck have you been?
Sunday May 27th Chucks is having a White Sox Tailgate Outing! It is a 1:10PM Game vs. The Cleveland Indians
Only 135 tickets will be sold (what the busses hold). You must pay for the tickets immediately, they will not reserve any for you, $85 per tickets includes all of the following:
1. Bus Ride and Bus Parking from Chuck's to U.S. Cellular Field
2. All You Can Drink Miller Cans from 11am til the bus returns from the park at Chuck's (around 4:30pm). You can't bring your alcohol into the park. At the park there will be one keg of Green Line Pale Ale, first come, first serve.
3. One ticket in Section 162, left field bleachers.
4. Chuck's Custom Tailgate Buffet of: BBQ Ribs, Pulled Pork, Smoked Chicken, Jamaican Jerk Wings, Jambalaya, Corn on the Cob, and Mac & Cheese (I know right)
5. Official White Sox/Chuck's T-Shirt!
6. Lastly, the greatest tailgate party ever.
You can call the restaurant now to book via credit card or stop by and pay with cash. Your receipt will be your ticket. AGAIN- ONLY 135 TICKETS WILL BE SOLD!

Results of the first poll question
Hey guys, it's Tim!!!
I can't begin to thank all of you who voted on the inaugural poll question and the choice was clear from the beginning. So my first 'official' blog posting will be a post about the man behind the food...Chuck himself.
Chuck received 50% of the vote so now it's my turn to sit down with the man who cooks up all these delicious dishes and uncover what it is about cooking that excites him and so much more!!! Chuck is obviously a busy individual so this posting will come hopefully sometime soon!!!

Never too early for Chuck's Fest news...
Hello readers,
The exciting news just keeps pouring in and this time around I'm talking Chuck's Fest. The event which I can only describe as EPIC has some big news to share with all of you so without further a due, let me divulge it with you.
Toyota Park will be home to this year's fest and the dates are September 7th-9th and will once again be providing all of us with the party of the year!
Some news to confirm with you so far is as follows:

Chuck's is headed to Toyota Park for a very special 3 day event June 1st-3rd where they will have a booth at this year's Throttle Fest.
The event which is deemed 'The Midwest's Largest 3 Day Bike Rally' features live music that this year includes Buckcherry on Friday June 1st and then Jackyl on Saturday June 2nd. The event will also feature the cast of Full Throttle Saloon and much much more!
Chuck is bringing along some of his most delicious dishes (menu to be determined) so make sure you check out the Chuck's booth at this year's Throttle Fest!!!

Chucks and The Voodoo Lounge do trivia night right
Hello readers,
Let me start off by asking all of you a question. When's the last time you went out on a Tuesday night and it felt like a Friday or Saturday night? Most of you right now are probably thinking I never go out on Tuesday nights because it's so early in my week or I have to get up for work early the next morning! While that may be true it shouldn't stop you from missing out on Whaddayaknow? Free Pub Trivia happening every Tuesday Night at 7:30 PM in The Voodoo Lounge at Chuck's!!!
Mike Wilson who hosts the event has his own goal in mind when it comes to trivia and is just trying to get people to look at it differently then they did in the past. "It's a nice thing to do during the week. Sometimes you need an excuse to go out, grab some friends and just have fun," says Mike. Let me tell you something guys, Mike couldn't be more right! Not to mention, throw in some of Chuck's delicious food and washing it down with a cold beer of choice (over 120 to choose from) you have a pretty solid combination, don't you think?
"It's not fun when you know every answer, you want the answers to the questions to bug you but in a good way," says Mike. The questions that he had for the participating teams tonight at the Voodoo Lounge were definitely those that left many thinking out loud to themselves, scratching their heads and invoking a friendly atmosphere of team competition as well.
But clearly, there were two teams tonight that stood above all others. Coming in second place was 'Peeps' who finished with a strong 118 points and are determined to come back next week to claim the top spot which has evaded them for two consecutive weeks!
However, in trivia there can only be one champion and tonight's champion was 'Fig Gems' who took home first place with a rather impressive score of 128 points! Our champions, pictured below, were asked for a quote to sum up their victory but couldn't conjure the words together to summarize their triumph, but congratulations go out to them!
The point of trivia night is this my friends, to simply put aside the start of your week for some great entertainment, challenging questions and to enjoy some delicious food and beverages with your closest friends or family members and to just have fun! We all need that escape once in a while, and it's just not fair to have to wait until Friday or the weekend to get away from our daily routine!
Chucks and The Voodoo Lounge are hosting 'Whaddayaknow? Free Pub Trivia every Tuesday Night at 7:30PM and like I said before it's FREE!!! The top two teams each and every Tuesday win prizes as well. So please, the next time you and your friends are looking for a fun night out stop into The Voodoo Lounge on Tuesday's for trivia and some downright good food!

Welcome to the new blog!
Hello everyone and let me be the first to welcome you to the brand new Chuck's Southern Comforts Cafe blog!!!
In case you're not familiar with Chuck's, let me provide you with what you need to know! Located at 6501 W. 79th Street in Burbank Illinois, Chuck's has become quite the talk of Burbank and it's surrounding areas. Recently showcased on Diner's, Drive-In's and Dives and Windy City Live, word is spreading throughout the Chicago land area making Chuck's a can't miss stop for great food and a fun atmosphere as well.
Chuck's offers up a mix of BBQ, Southern, New Orleans and Mexican dishes all rolled into one; and that is demonstrated throughout his menu offering up dishes for every food lover to enjoy and drool over.
This blog is going to be for the Chuck's lover in all of us! It'll take you behind the scenes so to speak and offer you insights into some of the ingredients used in some of Chuck's most delicious dishes and provide food reviews as well!
